Wing Sauce (How to use your hot sauce)
Summer-summer-time! Aka, wing time. I love grilled chicken wings so much. I love grilling them low and slow, and then tossing them in the wing sauce.
2 pounds (900g) chicken wings, cut into drumettes and flats
2 teaspoons (10g) baking powder or corn starch
2 teaspoons (10g) kosher or sea salt
4 tablespoons (50g) unsalted butter
4 tablespoons (60ml) your favorite hot sauce
Raita or blue cheese, for serving
Celery and carrot sticks, for serving
Toss wings with salt and the baking powder.
Grill low and slow over a grill, or bake for 45 minutes.
Meanwhile, combine butter and hot sauce in a small saucepan and cook over medium heat, whisking until combined. Transfer wings to a large bowl, add sauce, and toss to thoroughly coat.
Serve with raita or blue cheese, and some celery and carrots to balance the heat.
